We are heading out to Nic and Sara’s for Easter lunch and then to Debbie and David’s for Easter dinner. I told Nic I would make a dessert for his house and I decided to make Easter egg cake pops. I found these on the Bakerella website which is listed in my favorite websites on the right.
Jamie helped, but he then told me that he will no longer help me with any dessert that isn’t “normal”. Whatever that means!
Here is how I made the cake pops… Bake a cake and let is cool completely. Crumble the cake in a large bowl and add a can of frosting. Roll the mixture into egg shapes and place on waxed paper. Melt colored white chocolate candy and add some to the end of a lollipop stick. Stick it into the cake pop about 1/2 way and freeze for about 10 minutes to firm up. Once firm, dip into melted chocolate and carefully remove extra by either tapping gently or scraping with a spatula. Allow to dry in a block of styrofoam (about 10 minutes).
One box of cake mix made about 50 pops, but I ran out of colored chocolate so I only made about 40. I then put styrofoam in a Easter basket and added grass. I think it looks pretty, but it was kind of putzy and they taste very sweet. I added sprinkles to a couple pops before the chocolate dried, but I think they are sweet enough.

VERY fun! Cake pops are delicious! I'm working on my own festive dessert right now...we'll see how they turn out!
